Adding Microgreens to the menu

I'm ramping up Pea Shoots in my production schedule. They taste great and are extremely nutritious. Here's an article to reference, .

Among the highlights are;

-Seven times more vitamin C than blueberries.

-Eight times more folate than bean sprouts.

-Four times more Vitamin A than tomatoes.

-Up to 69% of high quality bio-available protein.

One of the focuses of my entire urban farm project is packing nutrition into every vegetable, Pea Shoots fit right into this goal. In two weeks at the Farmers Market, I've repeatedly been ask, 'What do you do with them?' So on my Pinterest page I'm adding recipes for micro-greens. They also work great in smoothies as a salad or just a snack.
